Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) diced tomatoes with green chilies

  • 6 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream (optional)

Directions:

  1. Preheat your oven: Start by preheating your oven to 350°F (175°C).
  2. Cook the ground beef: In a large skillet, cook the ground beef over medium heat until fully browned. Drain any excess fat. Stir in the taco seasoning mix according to the package instructions.
  3. Prepare the filling: Add the refried beans and diced tomatoes with green chilies to the cooked beef. Mix well and heat until everything is combined and warmed through.
  4. Layer the casserole: In a 9×13-inch baking dish, spread a thin layer of enchilada sauce at the bottom. Place 2 tortillas over the sauce, then spread 1/3 of the beef mixture over the tortillas. Sprinkle with cheese. Repeat the layers two more times, ending with a layer of tortillas topped with the remaining enchilada sauce and cheese.
  5. Bake: Cover the casserole with aluminum foil (optional) and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  6. Serve: Let the casserole cool for a few minutes before slicing. Top with sour cream and fresh cilantro if desired.
