Preparation
- Wash and cut the potatoes into even-sized pieces, approximately 1-inch cubes.
- Place the cut potatoes in a large bowl and add olive oil, garlic powder, salt, and black pepper. Toss well to coat the potatoes evenly.
Cooking
- Preheat your air fryer to 400°F (200°C).
- Arrange the potatoes in the air fryer basket in a single layer to avoid overcrowding.
- Air fry for 15 minutes. Open the basket and shake the potatoes for even browning.
- Sprinkle the grated Parmesan cheese over the potatoes and air fry for an additional 5-10 minutes, until golden brown and bubbly.
- Once done, remove the potatoes and garnish with fresh parsley before serving.
Notes
For a kick, add chili flakes. For a dairy-free option, use nutritional yeast instead of Parmesan. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 5-7 minutes.
