Banana Berry French Toast

Banana Berry French Toast offers a fruity twist on a breakfast classic.

Ingredients
  

  • 8 slices of thick-cut bread e.g., brioche or challah
  • 2 ripe bananas sliced
  • 1 cup fresh berries such as strawberries, blueberries, or raspberries
  • 4 large eggs
  • 1 cup milk
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Butter or oil for cooking
  • Maple syrup or honey for serving

Method
 

  1. Prepare the Custard Mixture:
  2. In a mixing bowl, whisk together eggs, milk, sugar, vanilla extract, and cinnamon until well blended.
  3. Soak the Bread:
  4. Dip each slice of bread into the custard mixture, allowing it to soak up the liquid without becoming too soggy.
  5. Cook the French Toast:
  6. Heat a large skillet or griddle over medium heat and add butter or oil.
  7. Place the soaked bread slices on the skillet and cook for about 2-3 minutes per side, or until golden brown and cooked through.
  8. Add the Fruit:
  9. After flipping the French toast, top each slice with sliced bananas and a handful of berries, allowing them to warm slightly while the second side cooks.

Notes

Serve the French toast warm, topped with additional fresh berries, a dusting of powdered sugar, and a drizzle of maple syrup or honey.
