- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with butter or cooking spray.
- Mix Dry Ingredients:
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Combine Wet Ingredients:
- In another bowl, mix mashed bananas, sugar, egg, and melted butter.
- Combine Mixtures and Add Blueberries:
- Add the banana mixture to the flour mixture, stirring just until moistened. Fold in the blueberries gently to avoid crushing them.
- Bake:
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool and Serve:
- Let the muffins cool in the tin for a few minutes before removing to cool completely on a wire rack.
Notes
For a healthier option, substitute half of the all-purpose flour with whole wheat flour.
