Banana Blueberry Muffins

Banana Blueberry Muffins are a delightful combination of sweet bananas and juicy blueberries, making them perfect for breakfast or as a snack.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 ripe bananas mashed
  • 3/4 cup sugar
  • 1 egg lightly beaten
  • 1/3 cup unsalted butter melted
  • 1 cup fresh blueberries

Instructions
 

  • Preheat the Oven:
  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with butter or cooking spray.
  • Mix Dry Ingredients:
  • In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  • Combine Wet Ingredients:
  • In another bowl, mix mashed bananas, sugar, egg, and melted butter.
  • Combine Mixtures and Add Blueberries:
  • Add the banana mixture to the flour mixture, stirring just until moistened. Fold in the blueberries gently to avoid crushing them.
  • Bake:
  • Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Cool and Serve:
  • Let the muffins cool in the tin for a few minutes before removing to cool completely on a wire rack.

Notes

For a healthier option, substitute half of the all-purpose flour with whole wheat flour.
