Belgian waffles

Belgian waffles are known for their light, airy texture and deep pockets, perfect for holding syrup, whipped cream, or fresh fruit.

Equipment

  • Belgian waffle iron

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs separated
  • 1/2 cup vegetable oil or melted butter
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • Optional: Additional sugar for dusting maple syrup, whipped cream, fresh berries, or chocolate chips for serving

Instructions
 

  • Preheat the Waffle Iron:
  • Preheat your Belgian waffle iron according to the manufacturer’s instructions.
  • Mix Dry Ingredients:
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
  • Prepare the Wet Ingredients:
  • In a separate bowl, whisk together the egg yolks, vegetable oil (or melted butter), milk, and vanilla extract until well combined.
  • Beat the Egg Whites:
  • In another bowl, using an electric mixer or whisk, beat the egg whites until stiff peaks form. This step is key to achieving the light and airy texture that Belgian waffles are known for.
  • Combine the Wet and Dry Ingredients:
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix the batter.
  • Fold in the Egg Whites:
  • Gently fold the beaten egg whites into the batter using a spatula. This should be done carefully to keep the batter light and airy.
  • Cook the Waffles:
  • Lightly grease the waffle iron with non-stick spray or a small amount of oil. Ladle or pour the batter onto the preheated waffle iron, spreading it evenly.
  • Close the waffle iron and cook according to the manufacturer’s instructions, usually 3-5 minutes, or until the waffles are golden brown and crisp.
  • Serve:
  • Serve the waffles immediately, dusted with powdered sugar, or topped with your favorite toppings such as maple syrup, whipped cream, fresh berries, or chocolate chips.

Notes

For extra crispy waffles, cook them a little longer until the steam stops escaping from the waffle iron.
If making waffles for a crowd, keep cooked waffles warm in a low oven (about 200°F) while you finish cooking the rest.
