Best Strawberry Poke Cake is a delightful and moist cake that’s filled with sweet strawberry gelatin and topped with fluffy whipped cream and fresh strawberries.

Ingredients
  

  • 1 box white cake mix plus ingredients listed on the box
  • 1 package 3 oz strawberry gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container 8 oz whipped topping (like Cool Whip), thawed
  • Fresh strawberries sliced, for topping

Instructions
 

  • Bake the Cake:
  • Preheat your oven according to the cake mix package instructions. Grease a 9x13 inch baking pan.
  • Prepare the white cake mix according to the package instructions and pour the batter into the prepared baking pan.
  • Bake the cake according to the package instructions until a toothpick inserted in the center comes out clean. Remove from the oven and let it cool slightly.
  • Prepare the Strawberry Gelatin:
  • In a mixing bowl, dissolve the strawberry gelatin in 1 cup of boiling water. Stir until completely dissolved.
  • Add 1/2 cup of cold water to the gelatin mixture and stir to combine.
  • Poke the Cake:
  • While the cake is still warm, use a fork or wooden skewer to poke holes all over the cake, spacing them about 1 inch apart.
  • Pour the strawberry gelatin mixture evenly over the top of the cake, ensuring it seeps into the holes.
  • Chill the Cake:
  • Place the cake in the refrigerator and let it chill for at least 2 hours, or until the gelatin is set and the cake is completely cooled.
  • Top the Cake:
  • Once the cake is chilled, spread the thawed whipped topping evenly over the top of the cake.
  • Arrange the sliced fresh strawberries on top of the whipped topping.

Slice the cake into squares and serve chilled.
