Best Strawberry Poke Cake is a delightful and moist cake that’s filled with sweet strawberry gelatin and topped with fluffy whipped cream and fresh strawberries.

Ingredients
  

  • 1 box white cake mix plus ingredients listed on the box
  • 1 package 3 oz strawberry gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container 8 oz whipped topping (like Cool Whip), thawed
  • Fresh strawberries sliced, for topping

Method
 

  1. Bake the Cake:
  2. Preheat your oven according to the cake mix package instructions. Grease a 9x13 inch baking pan.
  3. Prepare the white cake mix according to the package instructions and pour the batter into the prepared baking pan.
  4. Bake the cake according to the package instructions until a toothpick inserted in the center comes out clean. Remove from the oven and let it cool slightly.
  5. Prepare the Strawberry Gelatin:
  6. In a mixing bowl, dissolve the strawberry gelatin in 1 cup of boiling water. Stir until completely dissolved.
  7. Add 1/2 cup of cold water to the gelatin mixture and stir to combine.
  8. Poke the Cake:
  9. While the cake is still warm, use a fork or wooden skewer to poke holes all over the cake, spacing them about 1 inch apart.
  10. Pour the strawberry gelatin mixture evenly over the top of the cake, ensuring it seeps into the holes.
  11. Chill the Cake:
  12. Place the cake in the refrigerator and let it chill for at least 2 hours, or until the gelatin is set and the cake is completely cooled.
  13. Top the Cake:
  14. Once the cake is chilled, spread the thawed whipped topping evenly over the top of the cake.
  15. Arrange the sliced fresh strawberries on top of the whipped topping.

Slice the cake into squares and serve chilled.
