Preheat the Oven
Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
Cook the Sausage
In a large skillet, cook the ground sausage over medium heat until browned and fully cooked. Remove the sausage from the skillet with a slotted spoon, leaving the grease in the pan.
Make the Gravy
Add the flour to the skillet with the sausage grease and whisk to combine. Cook for 1–2 minutes to remove the raw flour taste. Gradually whisk in 2 cups of milk, stirring constantly, until the gravy thickens. Add black pepper, garlic powder, onion powder, and salt to taste. Return the sausage to the skillet, stir to combine, and remove from heat.
Assemble the Casserole
In a mixing bowl, whisk the eggs with 1/4 cup of milk and a pinch of salt. Pour the egg mixture into the prepared baking dish. Spread the cooked sausage and gravy evenly over the egg mixture.
Add the Biscuits
Scatter the quartered biscuit pieces over the sausage and gravy layer. If using cheese, sprinkle it on top.
Bake
Cover the casserole with foil and bake for 25 minutes. Remove the foil and bake for an additional 10–15 minutes, or until the biscuits are golden brown and cooked through.
Cool and Serve
Allow the casserole to rest for 5 minutes before serving. Slice and enjoy!
