Blackberry Cobbler

This Blackberry Cobbler is a sweet, comforting dessert that’s perfect for any occasion. Bursting with juicy, slightly tart blackberries and topped with a golden, biscuit-like crust, it’s the ultimate treat for berry lovers.

Ingredients
  

  • For the Blackberry Filling:
  • 4 cups fresh blackberries or frozen, thawed
  • ¾ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon optional
  • For the Biscuit Topping:
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter cold and cut into small cubes
  • ¾ cup whole milk

Method
 

  1. Prepare the Blackberry Filling:
  2. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch baking dish.
  3. Combine Ingredients: In a mixing bowl, combine the blackberries, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon (if using). Gently toss to coat the berries evenly. Pour the mixture into the prepared baking dish.
  4. Make the Biscuit Topping:
  5. Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, salt, and sugar.
  6. Cut in the Butter: Add the cold butter cubes to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  7. Add Milk: Gradually stir in the milk, mixing just until the dough comes together. Be careful not to overmix.
  8. Assemble the Cobbler:
  9. Top the Filling: Using a spoon, drop spoonfuls of the biscuit dough over the blackberry filling, covering most of the surface. The dough doesn’t need to be perfectly spread out—it will spread as it bakes.
  10. Bake the Cobbler: Bake for 40-45 minutes, or until the topping is golden brown and the blackberry filling is bubbling.

Notes

Frozen Blackberries: If you use frozen blackberries, make sure to thaw them and drain any excess liquid before using.
