Ingredients

  • 2 tablespoons balsamic vinegar

  • 4 ounces goat cheese
  • Fresh thyme or rosemary optional, for garnish
  • Crackers crostini, or bread for serving

Instructions

  • In a small saucepan over medium heat, combine the blueberries, balsamic vinegar, honey, lemon juice, and black pepper. Stir occasionally and cook until the blueberries soften and the sauce thickens, about 8-10 minutes. Remove from heat and let cool slightly.

  • Place the goat cheese on a serving platter or small dish. You can leave it as a log or flatten it slightly for more surface area.
  • Add the Blueberry Mixture:
  • Spoon the slightly cooled blueberry balsamic sauce over the goat cheese, allowing it to drizzle down the sides.
