- Prepare the Egg Mixture:
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
- Soak the Crumpets:
- Dip each crumpet into the egg mixture, allowing them to soak up some of the liquid but not become too soggy.
- Cook the Crumpets:
- Heat butter or oil in a skillet over medium heat.
- Place the soaked crumpets in the skillet and pour a little of the remaining egg mixture into the middle of each crumpet.
- Cook for 2-3 minutes on each side or until the eggs are fully set and the crumpets are golden brown.
- Serve:
- Serve the eggy crumpets hot, with your choice of toppings such as shredded cheese, cooked bacon, diced tomatoes, or fresh herbs.
Notes
For an extra kick, add a dash of hot sauce or sprinkle some chili flakes on top of the eggy crumpets.
