Breakfast Eggy Crumpets

Breakfast Eggy Crumpets are a delicious twist on traditional breakfast fare, combining the fluffy texture of crumpets with the rich taste of eggs.

Equipment

  • Skillet or non-stick frying pan
  • Mixing bowl
  • Whisk
  • Spatula

Ingredients
  

  • 4 crumpets
  • 4 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 2 tbsp butter or oil
  • Optional toppings: cheese cooked bacon, diced tomatoes, fresh herbs

Instructions
 

  • Prepare the Egg Mixture:
  • In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  • Soak the Crumpets:
  • Dip each crumpet into the egg mixture, allowing them to soak up some of the liquid but not become too soggy.
  • Cook the Crumpets:
  • Heat butter or oil in a skillet over medium heat.
  • Place the soaked crumpets in the skillet and pour a little of the remaining egg mixture into the middle of each crumpet.
  • Cook for 2-3 minutes on each side or until the eggs are fully set and the crumpets are golden brown.
  • Serve:
  • Serve the eggy crumpets hot, with your choice of toppings such as shredded cheese, cooked bacon, diced tomatoes, or fresh herbs.

Notes

For an extra kick, add a dash of hot sauce or sprinkle some chili flakes on top of the eggy crumpets.
Serve with a side of fresh fruit or a light salad for a balanced meal.
