Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Filling:
In a mixing bowl, combine the chopped broccoli, shredded cheddar cheese, softened cream cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Prepare the Chicken:
Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
Fill each pocket with the broccoli and cheese mixture.
Secure the Filling:
If necessary, use toothpicks to secure the openings of the chicken breasts to keep the filling from spilling out.
Sear the Chicken:
In a large skillet, heat the olive oil over medium-high heat.
Add the stuffed chicken breasts and sear for 2-3 minutes on each side, until golden brown.
Prepare the Topping:
In a small bowl, combine the breadcrumbs and melted butter. Mix until the breadcrumbs are evenly coated.
Bake the Chicken:
Transfer the seared chicken breasts to a baking dish.
Sprinkle the breadcrumb mixture evenly over the top of each chicken breast.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
Serve:
Allow the chicken to rest for a few minutes before serving.
