Cheesy Hamburger Rice Casserole is a hearty and comforting one-dish meal that's perfect for busy weeknights or feeding a hungry crowd. Packed with seasoned ground beef, fluffy rice, and a creamy, cheesy sauce, this casserole is both satisfying and easy to make. It’s a fantastic option for when you want something simple but full of flavor.

Ingredients
  

  • 1 pound ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 2 cups cooked rice white or brown
  • 1 can 10.5 ounces cream of mushroom soup
  • ½ cup milk
  • 4 ounces cream cheese softened
  • cups shredded cheddar cheese divided
  • 2 tablespoons chopped parsley optional, for garnish

Method
 

  1. Preheat the Oven
  2. Preheat your oven to 375°F and lightly grease a 9x13-inch baking dish.
  3. Cook the Ground Beef
  4. In a large skillet, cook the ground beef over medium heat until browned, breaking it up as it cooks.
  5. Add the chopped onion and garlic, cooking until softened and fragrant, about 3-5 minutes.
  6. Stir in the paprika, Italian seasoning, salt, and black pepper. Remove from heat.
  7. Prepare the Creamy Sauce
  8. In a mixing bowl, combine the cream of mushroom soup, milk, and cream cheese. Stir until smooth and well combined.
  9. Assemble the Casserole
  10. In the prepared baking dish, combine the cooked rice, ground beef mixture, and creamy sauce. Mix well.
  11. Stir in 1 cup of shredded cheddar cheese, ensuring it’s evenly distributed.
  12. Top and Bake
  13. Sprinkle the remaining ½ cup of cheddar cheese over the top of the casserole.
  14. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  15. Garnish and Serve
  16. Remove the casserole from the oven and let it rest for 5 minutes. Garnish with chopped parsley if desired, and serve warm.
