- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners, or line a baking sheet with parchment paper.
- Mix the Potatoes: In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, egg, green onions (if using), garlic powder, salt, and black pepper. Stir everything together until well mixed.
- Form the Puffs: Use a spoon or cookie scoop to scoop out the mashed potato mixture and form small mounds. Place them into the muffin tin or arrange them on the baking sheet.
- Add the Topping: If desired, sprinkle the tops of the puffs with melted butter and breadcrumbs for extra crunch.
- Bake: Bake for 20–25 minutes, or until the puffs are golden brown and crispy on top.
- Serve: Let the puffs cool for a few minutes before serving. Enjoy them as a side dish or appetizer!
