Cheesy Mississippi Mud Potatoes

Cheesy Mississippi Mud Potatoes are a rich and flavorful side dish made with tender potatoes, melted cheese, and a creamy, savory sauce.

Ingredients
  

  • 4 –5 medium Yukon Gold or Russet potatoes diced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese plus extra for topping
  • 4 tablespoons unsalted butter melted
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ¼ cup green onions sliced (optional garnish)

Equipment

  • Baking dish (9x13 inch)
  • Large mixing bowl
  • Cutting board and knife
  • Aluminum foil
  • Spatula or serving spoon

Method
 

  1. Preheat and Prepare
  2. Preheat your oven to 375°F (190°C).
  3. Lightly grease a 9x13-inch baking dish or line with parchment paper.
  4. Prepare the Potatoes
  5. Wash and dice the potatoes into bite-sized pieces.
  6. Place the potatoes in a large mixing bowl.
  7. Make the Sauce
  8. In a small bowl, mix the sour cream, melted butter, garlic powder, onion powder, and black pepper.
  9. Pour the sauce over the potatoes and toss to coat evenly.
  10. Assemble the Dish
  11. Spread the coated potatoes evenly in the prepared baking dish.
  12. Sprinkle the shredded cheddar cheese on top.
  13. Bake
  14. Cover the dish with aluminum foil and bake for 30 minutes.
  15. Remove the foil and bake for an additional 15–20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  16. Garnish and Serve
  17. Remove from the oven and let cool for a few minutes.
  18. Sprinkle with sliced green onions if desired. Serve warm.
