Marinate the Chicken:
In a bowl, combine the thinly sliced chicken breast, 1 tablespoon soy sauce, and 1 tablespoon cornstarch. Mix well and let it marinate for about 15 minutes.
Prepare the Chow Mein Sauce:
In a mixing bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, cornstarch, chicken broth, sugar, grated ginger, and minced garlic until well combined. Set aside.
Cook the Noodles:
In a pot, cook the chow mein noodles or spaghetti according to the package instructions. Drain and set aside.
Stir-Fry the Chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until it’s cooked through, about 4-5 minutes. Remove the chicken from the skillet and set aside.
Cook the Vegetables:
In the same skillet, add the sliced onion and shredded carrots. Stir-fry for about 2-3 minutes until they start to soften. Add the shredded cabbage and bean sprouts and continue to stir-fry for another 2 minutes.
Combine All Ingredients:
Add the cooked chicken back into the skillet along with the cooked noodles. Pour the prepared chow mein sauce over the top and toss everything together until well coated and heated through, about 2-3 minutes. Add the sliced green onions and give it one final toss.
Serve:
Serve the Chicken Chow Mein hot, garnished with additional green onions if desired. Enjoy your delicious and flavorful Chicken Chow Mein!
