Cowboy Cookies are delightfully chewy cookies that are packed with an irresistible mix of oats, chocolate chips, coconut, and pecans.

Equipment

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups old-fashioned oats
  • 1 cup shredded coconut optional
  • 1 cup chopped pecans optional
  • 1 1/2 cups semisweet chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the oats, shredded coconut (if using), chopped pecans (if using), and chocolate chips until evenly distributed.
  • Shape the Cookies:
  • Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake the Cookies:
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
