Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a mini muffin tin lightly or line with paper cups.
Prepare the Puff Pastry:
Roll out the thawed puff pastry on a lightly floured surface. Cut it into 12 equal squares.
Assemble the Bites:
Place each square of puff pastry into the wells of the mini muffin tin, pressing down gently to create a cup shape.
Add the Brie and Cranberry Sauce:
Place a cube of Brie cheese into each puff pastry cup. Add about 1 teaspoon of cranberry sauce on top of the Brie.
Optional Toppings:
Sprinkle with chopped pecans or walnuts for crunch, or add a tiny sprig of fresh rosemary for a festive touch.
Bake:
Bake in the preheated oven for 12–15 minutes, or until the puff pastry is golden brown and crispy.
Cool and Serve:
Allow the bites to cool slightly before removing them from the tin. Serve warm or at room temperature.
