Easy Crockpot Chili

This Easy Crockpot Chili is the ultimate comfort food, perfect for busy weeknights or chilly days.

Equipment

  • Large skillet (for browning meat)
  • Slow cooker
  • Wooden spoon or spatula
  • Measuring cups and spoons

Ingredients
  

  • 1 pound ground beef
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 3 garlic cloves minced
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 28 oz diced tomatoes (with juices)
  • 1 can 6 oz tomato paste
  • 1 cup beef broth or water
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: shredded cheese sour cream, green onions, tortilla chips

Instructions
 

  • Brown the Beef:
  • Heat a skillet over medium heat and cook the ground beef until browned. Drain excess fat.
  • Combine Ingredients in Crockpot:
  • Transfer the cooked beef to the slow cooker. Add onion, bell pepper, garlic, beans, diced tomatoes, tomato paste, and beef broth.
  • Add Spices:
  • Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Mix well to combine.
  • Cook Low and Slow:
  • Cover and cook on low for 6–8 hours or high for 3–4 hours, stirring occasionally.
  • Adjust Seasoning:
  • Taste the chili before serving and adjust salt, pepper, or spices as needed.
