Farmer’s Casserole

Farmer’s Casserole is a hearty, comforting dish that brings together wholesome ingredients like eggs, potatoes, cheese, and vegetables in a deliciously satisfying bake.

Ingredients
  

  • 4 cups frozen hash browns thawed
  • 1 cup shredded cheddar cheese
  • ½ cup diced onion
  • ½ cup diced bell peppers optional
  • 1 cup cooked and diced chicken or turkey sausage optional
  • 6 large eggs
  • 1 ½ cups milk whole or 2%
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: 2 tablespoons chopped fresh parsley for garnish

  • Mixing bowls
  • Whisk
  • Knife and cutting board
  • Aluminum foil (optional)

Method
 

  1. Prepare the Baking Dish
  2. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.
  3. Layer the Ingredients
  4. Spread the hash browns evenly in the prepared baking dish.
  5. Sprinkle the shredded cheese, onions, bell peppers, and optional cooked sausage over the hash browns.
  6. Make the Egg Mixture
  7. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  8. Pour and Bake
  9. Pour the egg mixture evenly over the layered ingredients in the baking dish.
  10. Bake uncovered for 40-50 minutes, or until the eggs are set and the top is golden brown.
  11. Rest and Serve
  12. Allow the casserole to cool for 5 minutes before slicing. Garnish with fresh parsley if desired, and serve warm.
