Farmer’s Casserole

Farmer’s Casserole is a hearty, comforting dish that brings together wholesome ingredients like eggs, potatoes, cheese, and vegetables in a deliciously satisfying bake.

Equipment

  • 9x13-inch baking dish
  • Mixing bowls
  • Whisk
  • Knife and cutting board
  • Aluminum foil (optional)

Ingredients
  

  • 4 cups frozen hash browns thawed
  • 1 cup shredded cheddar cheese
  • ½ cup diced onion
  • ½ cup diced bell peppers optional
  • 1 cup cooked and diced chicken or turkey sausage optional
  • 6 large eggs
  • 1 ½ cups milk whole or 2%
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: 2 tablespoons chopped fresh parsley for garnish

Instructions
 

  • Prepare the Baking Dish
  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.
  • Layer the Ingredients
  • Spread the hash browns evenly in the prepared baking dish.
  • Sprinkle the shredded cheese, onions, bell peppers, and optional cooked sausage over the hash browns.
  • Make the Egg Mixture
  • In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Pour and Bake
  • Pour the egg mixture evenly over the layered ingredients in the baking dish.
  • Bake uncovered for 40-50 minutes, or until the eggs are set and the top is golden brown.
  • Rest and Serve
  • Allow the casserole to cool for 5 minutes before slicing. Garnish with fresh parsley if desired, and serve warm.
