Ingredients
  

  • 4 large russet potatoes scrubbed clean
  • 3 tablespoons olive oil divided
  • 2 large onions thinly sliced
  • 2 cloves garlic minced
  • 1 teaspoon sugar
  • 1 teaspoon salt divided
  • 1/2 teaspoon black pepper divided
  • 1 cup beef broth
  • 1/2 cup shredded Gruyère cheese optional
  • Fresh thyme leaves for garnish optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Prick the potatoes with a fork and rub them with 1 tablespoon of olive oil. Place them on a baking sheet and bake for 1 hour, or until tender.
  3. Caramelize the Onions:
  4. While the potatoes are baking, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat.
  5. Add the onions and cook, stirring occasionally, until they are soft and golden, about 25-30 minutes.
  6. Add the garlic, sugar, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper, and cook for another 5 minutes.
  7. Add the beef broth and cook until it is mostly absorbed, about 10 minutes. Remove from heat.
  8. Stuff the Potatoes:
  9. Once the potatoes are done, let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer around the skin.
  10. In a mixing bowl, combine the potato flesh with the caramelized onions. Season with the remaining salt and pepper.
  11. Spoon the mixture back into the potato skins. Top with shredded Gruyère cheese, if using.
  12. Bake the Stuffed Potatoes:
  13. Reduce the oven temperature to 375°F (190°C).
  14. Place the stuffed potatoes back on the baking sheet and bake for another 15 minutes, or until the cheese is melted and bubbly.
  15. Serve:
