Add the halved baby potatoes, cut side down. Season with salt and pepper.
Cook the potatoes for about 10-12 minutes, flipping halfway through, until they are golden brown and fork-tender.
Remove the potatoes from the skillet and set aside.
Cook the Steak:
In the same skillet, add the remaining 1 tablespoon of olive oil over medium-high heat.
Add the steak cubes, seasoning them with salt and pepper. Sear the steak for 2-3 minutes on each side until they are browned and cooked to your desired doneness.
Remove the steak from the skillet and set aside with the potatoes.
Make the Garlic Butter:
In the same skillet, reduce the heat to medium. Add the remaining 2 tablespoons of butter.
Once the butter is melted, add the minced garlic, rosemary, and thyme. Cook for 1-2 minutes until the garlic is fragrant and the herbs are slightly crisp.
Combine and Serve:
Return the cooked potatoes and steak to the skillet. Toss everything together in the garlic butter until well coated and heated through.
Garnish with fresh parsley if desired, and serve immediately.
