  • 1 lb ground beef Halal-friendly
  • 1 medium onion, chopped
  • 1 can green beans, drained (15 oz)
  • 1 can corn, drained (15 oz)
  • 1 can diced tomatoes, drained (15 oz)
  • 2 cups potatoes, diced
  • 1 tsp garlic powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (around 175°C) for the perfect golden crust.
  2. In a large skillet over medium heat, add the ground beef and chopped onion. Cook until the beef is no longer pink and the onions are translucent, about 5-7 minutes.
  3. Drain any excess grease. In a large mixing bowl, combine the browned beef, drained green beans, drained corn, drained diced tomatoes, and diced potatoes. Add garlic powder, salt, and pepper. Mix everything well.
  4. Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.
Baking
  1. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
Serving
  1. Allow the casserole to cool for a few minutes before serving. Scoop out generous portions and enjoy!

Notes

Feel free to substitute ground beef with halal turkey or chicken. Make sure potatoes are diced small for even cooking, and drain canned vegetables to avoid a watery casserole. Perfect for meal prepping and storing in the fridge for up to 3 days or freezing for up to 3 months.
