Loaded Cheesy Pocket

Loaded Cheesy Pocket Tacos are delightfully crispy tacos filled with a savory blend of seasoned ground beef, melted cheese, and your favorite toppings.

Equipment

  • Wooden spoon or spatula

Ingredients
  

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning mix
  • 2/3 cup water
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup chopped green onions
  • 1/2 cup sour cream optional
  • 1/2 cup salsa optional
  • Cooking spray or oil

Instructions
 

  • Prepare the Ground Beef:
  • In a large skillet over medium-high heat, cook the ground beef until browned and fully cooked, breaking it up with a wooden spoon or spatula as it cooks.
  • Drain any excess fat from the skillet.
  • Add Seasoning:
  • Add the taco seasoning mix and water to the cooked ground beef. Stir to combine.
  • Reduce heat to medium and let it simmer for 5-10 minutes, or until the mixture thickens and the flavors meld together.
  • Prepare the Tortillas:
  • Preheat your oven to 375°F (190°C).
  • Lightly spray or brush one side of each flour tortilla with cooking spray or oil.
  • Assemble the Pocket Tacos:
  • Place a few tablespoons of the seasoned ground beef mixture in the center of each tortilla.
  • Sprinkle a generous amount of shredded cheddar cheese over the meat.
  • Fold the tortillas in half to create a pocket, pressing down gently to seal the edges.
  • Bake the Tacos:
  • Place the folded tortillas on a baking sheet, making sure they do not overlap.
  • Bake in the preheated oven for 10-12 minutes, or until the tortillas are crispy and the cheese is melted.
  • Add Toppings:
  • Carefully remove the tacos from the oven and let them cool slightly.
  • Open each taco slightly and fill with shredded lettuce, diced tomatoes, sliced black olives, and chopped green onions.
  • Add sour cream and salsa if desired.
