- Prepare the Ground Beef:

- Drain any excess fat from the skillet.
- Add Seasoning:
- Add the taco seasoning mix and water to the cooked ground beef. Stir to combine.
- Reduce heat to medium and let it simmer for 5-10 minutes, or until the mixture thickens and the flavors meld together.
- Prepare the Tortillas:
- Preheat your oven to 375°F (190°C).
- Lightly spray or brush one side of each flour tortilla with cooking spray or oil.
- Assemble the Pocket Tacos:
- Place a few tablespoons of the seasoned ground beef mixture in the center of each tortilla.
- Sprinkle a generous amount of shredded cheddar cheese over the meat.
- Fold the tortillas in half to create a pocket, pressing down gently to seal the edges.
- Bake the Tacos:
- Place the folded tortillas on a baking sheet, making sure they do not overlap.
- Bake in the preheated oven for 10-12 minutes, or until the tortillas are crispy and the cheese is melted.
- Add Toppings:
- Carefully remove the tacos from the oven and let them cool slightly.
- Open each taco slightly and fill with shredded lettuce, diced tomatoes, sliced black olives, and chopped green onions.
- Add sour cream and salsa if desired.
