Magic Lemon Cobbler is a delightful dessert that’s simple to make but packed with vibrant lemon flavor. It’s a one-bowl wonder that transforms into a perfectly sweet and tangy treat as it bakes. The magic happens when the batter separates into two layers: a fluffy cake-like top and a creamy, custardy bottom.

Ingredients
  

  • 1 cup granulated sugar 200 g
  • 1 cup milk 240 ml
  • 1 cup all-purpose flour 120 g
  • 1/2 cup unsalted butter 113 g, melted
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice 60 ml
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Preheat and Prepare:
  • Preheat your oven to 350°F (175°C). Grease or butter a 9x9-inch baking dish.
  • Make the Batter:
  • In a medium bowl, whisk together the sugar, milk, flour, baking powder, salt, and vanilla extract until smooth. The batter will be thin, which is normal.
  • Stir in the melted butter, lemon zest, and lemon juice until fully combined. The butter will separate into the bottom of the dish as you mix.
  • Bake:
  • Pour the batter into the prepared baking dish. Do not stir—it’s important for the ingredients to settle naturally as they bake.
  • Bake in the preheated oven for 35–40 minutes, or until the top is golden brown and the center is set. The cobbler will bubble up around the edges, and the center will form a custard-like layer.
  • Serve:
  • Allow the cobbler to cool for a few minutes before serving. It’s best served warm with whipped cream, vanilla ice cream, or a sprinkle of powdered sugar.

Notes

Lemon: For an extra burst of lemon flavor, use a bit more zest or juice if you like it tangier.
Butter: Make sure to use melted butter to create the signature layers in this cobbler.
Baking Dish: You can use a different-sized baking dish, but the baking time may vary. A larger dish may require a shorter baking time, while a smaller dish may take longer.
