Meatball Quesadillas

Meatball Quesadillas are a delightful fusion of Italian and Mexican cuisine, combining savory meatballs with melty cheese and crispy tortillas.

Equipment

  • Skillet
  • Mixing bowl
  • Baking sheet (optional)
  • Spatula

Ingredients
  

  • 12 meatballs homemade or store-bought, cooked and sliced
  • 8 large flour tortillas
  • 2 cups shredded mozzarella cheese
  • 1/2 cup marinara sauce
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chopped fresh basil optional
  • Olive oil or cooking spray

Instructions
 

  • Prepare the Meatballs:
  • If using store-bought meatballs, cook them according to package instructions and slice them. If using homemade meatballs, slice them after cooking.
  • Assemble the Quesadillas:
  • Lay out 4 tortillas and evenly spread a thin layer of marinara sauce on each.
  • Sprinkle half of the mozzarella cheese over the marinara sauce.
  • Distribute the sliced meatballs evenly over the cheese.
  • Sprinkle the remaining mozzarella cheese and grated Parmesan cheese over the meatballs.
  • Top with the remaining tortillas.
  • Cook the Quesadillas:
  • Heat a skillet over medium heat and lightly coat with olive oil or cooking spray.
  • Cook each quesadilla for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Press down gently with a spatula to ensure even cooking.

Notes

Cut the quesadillas into wedges and serve warm. Garnish with chopped fresh basil, if desired.
