Method
- Prepare the Dish: Grease a 9x13-inch baking dish with butter or line it with parchment paper. Set aside.
- Cook the Sugar Mixture: In a large saucepan over medium heat, combine the sugar, milk, and butter. Stir constantly until the sugar dissolves and the mixture comes to a boil.
- Boil to Soft Ball Stage: Continue cooking the mixture without stirring until it reaches the soft ball stage (235°F/112°C on a candy thermometer). If you don't have a thermometer, drop a small amount into cold water; it should form a soft, pliable ball.
- Add Vanilla and Nuts: Remove the saucepan from heat and stir in the vanilla extract and mixed nuts until the nuts are evenly coated.
- Spread in the Dish: Quickly pour the mixture into the prepared dish, spreading it evenly with a spatula if needed.
- Cool and Set: Allow the candy to cool completely at room temperature until firm, about 1–2 hours.
- Cut and Serve: Once set, cut the candy into squares or desired shapes and enjoy!
Notes
Use Fresh Nuts: Freshly toasted nuts enhance the flavor and texture of the candy.
Customize the Nuts: Swap or adjust the nuts based on your preference or what you have on hand.
Work Quickly: The mixture sets fast, so have your dish ready before adding the nuts.
