Old Fashioned Salmon Patties are a classic, budget-friendly dish that has been loved for generations. Made with canned salmon, simple seasonings, and a few pantry staples, these patties are crispy on the outside and tender on the inside. They're perfect for a quick and easy meal that pairs well with a variety of sides.

Ingredients
  

  • 1 can 14.75 oz salmon, drained and flaked
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper optional
  • 1/2 cup breadcrumbs or crushed saltine crackers
  • 1 large egg beaten
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard optional
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil for frying
  • Lemon wedges for serving, optional

Instructions
 

  • Prepare the Salmon Mixture:
  • In a mixing bowl, combine the drained and flaked salmon, making sure to remove any large bones and skin if desired.
  • Add the chopped onion, green bell pepper (if using), breadcrumbs or crushed saltine crackers, beaten egg, mayonnaise, lemon juice, Dijon mustard (if using), garlic powder, salt, and pepper.
  • Mix everything together until well combined. The mixture should be moist but firm enough to hold its shape.
  • Form the Patties:
  • Divide the salmon mixture into 6 equal portions and shape each portion into a patty, about 1/2 inch thick.
  • Heat the Oil:
  • Heat the vegetable oil in a skillet or frying pan over medium heat until it shimmers.
  • Cook the Patties:
  • Carefully place the salmon patties in the hot oil, being careful not to overcrowd the pan. Cook in batches if necessary.
  • Fry the patties for 3-4 minutes on each side, or until golden brown and crispy on the outside.
  • Once cooked, transfer the patties to a plate lined with paper towels to drain any excess oil.
  • Serve:
  • Serve the salmon patties warm with lemon wedges on the side for squeezing over the top.

Notes

Breadcrumbs vs. Crackers: Use whichever you have on hand. Crackers add a bit more texture, while breadcrumbs are finer and more uniform.
Add-ins: For added flavor, you can mix in chopped herbs like dill or parsley, or a dash of hot sauce for a little kick.
Make Ahead: You can prepare the salmon mixture ahead of time and refrigerate it until you're ready to cook. This can help the patties hold together better during frying.
