Oven Fried Potatoes & Onions are a delightfully crispy and flavorful side dish that’s easy to prepare and perfect for any meal. They’re not heavy or overly greasy either.

  • Large baking sheet
  • Parchment paper or aluminum foil
  • Large mixing bowl
  • Sharp knife and cutting board

Ingredients
  

  • 4 large potatoes peeled and thinly sliced
  • 1 large onion thinly sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Fresh parsley chopped (optional, for garnish)

Instructions
 

  • reheat your oven to 425°F (220°C).
  • Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  • Prepare the Potatoes and Onions:
  • In a large mixing bowl, combine the thinly sliced potatoes and onions.
  • Drizzle the olive oil over the potatoes and onions, and toss to coat evenly.
  • Season the Potatoes and Onions:
  • Add the garlic powder, paprika, dried thyme, dried rosemary, salt, and black pepper to the bowl.
  • Toss everything together until the potatoes and onions are well-coated with the seasonings.
  • Bake the Potatoes and Onions:
  • Spread the seasoned potatoes and onions in a single layer on the prepared baking sheet.
  • Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the potatoes are golden brown and crispy, stirring halfway through the cooking time to ensure even cooking.
  • Serve:
  • Remove the baking sheet from the oven and let the potatoes and onions cool slightly.
  • Transfer the oven-fried potatoes and onions to a serving dish.
  • Garnish with fresh parsley if desired.
