- Preheat and Prepare:
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats for easy cleanup.
- In a medium bowl, melt the butter for the brownie base in the microwave or on the stove. Set aside to cool slightly.
- Make the Brownie Base:
- In a large bowl, whisk together the sugar and melted butter until smooth.
- Add the eggs and vanilla extract to the bowl, mixing well to combine.
- In another bowl, sift together the flour, cocoa powder, baking powder, and a pinch of salt. Gradually add this dry mixture into the wet ingredients, stirring until well combined. The dough should be thick and slightly sticky.
- Prepare the Peanut Butter Swirl:
- In a small bowl, combine the peanut butter, powdered sugar, melted butter, and vanilla extract. Stir until smooth and well blended.
- Assemble the Cookies:
- Drop spoonfuls of the brownie dough onto the prepared baking sheets, leaving about 2 inches of space between each one.
- Using a spoon or a toothpick, make a small indentation in the center of each dough ball. Add a spoonful of the peanut butter mixture to the center of each cookie.
- Use a toothpick, knife, or skewer to gently swirl the peanut butter into the brownie dough, creating a marbled effect.
- Bake the Cookies:
- Bake the cookies in the preheated oven for 10–12 minutes, or until the edges are set but the centers are still slightly soft. They will continue to firm up as they cool.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a cooling rack to cool completely.
- Serve:
