Ingredients

  • 1 pound large shrimp peeled and deveined (tails on or off)
  • ½ cup basil pesto store-bought or homemade
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional garnish: Lemon wedges and grated Parmesan cheese

Equipment

  • Mixing bowl
  • Grill or grill pan
  • Skewers (if using)
  • Brush for basting

Method

  1. Prepare the Shrimp:
  2. In a mixing bowl, combine the shrimp, pesto, olive oil, and lemon juice. Toss until the shrimp are evenly coated. Cover and let marinate in the refrigerator for 15-30 minutes to enhance flavor.
  3. Preheat the Grill:
  4. If using an outdoor grill, preheat it to medium-high heat. For a grill pan, heat it over medium-high on the stove.
  5. Skewer the Shrimp (Optional):
  6. If using wooden skewers, soak them in water for 20 minutes to prevent burning. Thread the marinated shrimp onto the skewers, ensuring they lie flat for even grilling.
  7. Grill the Shrimp:
  8. Place the shrimp directly on the grill or in the grill pan. Cook for 2-3 minutes per side, or until the shrimp are opaque and lightly charred. Be careful not to overcook, as shrimp cook very quickly.
  9. Serve:
  10. Transfer the shrimp to a serving platter and garnish with lemon wedges and Parmesan cheese, if desired. Serve hot.

Notes

Homemade Pesto: For the freshest flavor, consider making your own pesto with fresh basil, garlic, Parmesan, pine nuts, and olive oil.
Cooking Without a Grill: Cook the shrimp in a hot skillet with a little olive oil if a grill isn’t available.
