Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 1 green bell pepper finely chopped
  • 1/2 red bell pepper finely chopped
  • 2 cloves garlic minced
  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 8 slices provolone cheese
  • For the Topping:
  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon mustard

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x5 inch loaf pan or line it with parchment paper.
  3. Sauté the Vegetables:
  4. In a large skillet, heat the olive oil over medium heat.
  5. Add the chopped onion, green bell pepper, and red bell pepper. Sauté until the vegetables are tender, about 5 minutes.
  6. Add the minced garlic and cook for another 1-2 minutes. Remove from heat and let cool slightly.
  7. Prepare the Meatloaf Mixture:
  8. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, eggs, Worcestershire sauce, salt, black pepper, oregano, and thyme.
  9. Add the sautéed vegetables to the meat mixture and mix until well combined.
  10. Shape the Meatloaf:
  11. Press half of the meat mixture into the prepared loaf pan.
  12. Place 4 slices of provolone cheese over the meat mixture.
  13. Press the remaining meat mixture over the cheese, sealing the edges.
  14. Prepare the Topping:
  15. In a small bowl, mix together the ketchup, brown sugar, and mustard.
  16. Spread the topping evenly over the meatloaf.
  17. Bake:
  18. Cover the loaf pan with aluminum foil and bake in the preheated oven for 45 minutes.
  19. Remove the foil and bake for an additional 15 minutes, or until the meatloaf is cooked through and the topping is caramelized.
  20. Serve:
  21. Let the meatloaf rest for 10 minutes before slicing.
  22. Serve with your favorite side dishes.
