- Cook the Beef and Vegetables:
- Heat olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and cooked through. Drain excess fat if necessary.
- Add the bell pepper, onion, and garlic to the skillet. Sauté until the vegetables are softened, about 4–5 minutes.
- Make the Sauce:
- Stir in the ketchup, Worcestershire sauce, and beef broth. Simmer for 2–3 minutes.
- Add the cornstarch slurry to the skillet and stir until the mixture thickens. Season with salt and pepper.
- Add the Cheese:
- Lower the heat to medium-low. Lay the provolone cheese slices over the beef mixture. Cover the skillet and let the cheese melt, about 1–2 minutes. Stir to combine the melted cheese into the beef mixture.
- Assemble the Sloppy Joes:
- Toast the buns on a baking sheet in a preheated oven at 375°F (190°C) for 3–5 minutes or until golden.
- Spoon the cheesy beef mixture onto the bottom halves of the buns. Top with the other halves and serve immediately.
