  • 5 cups cubed day-old bread French bread works well
  • 1 can 20 oz crushed pineapple, drained
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1 teaspoon ground cinnamon optional
  • 1/2 teaspoon ground nutmeg optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine the cubed bread and crushed pineapple. Mix well.
  3. In a medium mixing bowl, whisk together the sugar and melted butter until well combined.
  4. Add the eggs, one at a time, whisking well after each addition.
  5. Stir in the vanilla extract, milk, cinnamon, and nutmeg (if using).
  6. Pour the egg mixture over the bread and pineapple mixture. Gently stir to combine, ensuring all the bread is soaked.
  7. Pour the mixture into the prepared baking dish and spread it evenly with a spatula.
