  • 2 cups sauerkraut drained
  • 1/2 teaspoon caraway seeds optional
  • 1/2 teaspoon black pepper

Instructions
 

  • Cook the sausage: Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the sliced Polish sausage and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  • Sauté the onions and garlic: In the same skillet, add the sliced onions and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add the potatoes: Add the diced potatoes to the skillet and cook for 5 minutes, stirring occasionally, until they start to brown slightly.
  • Combine the ingredients: Return the sausage to the skillet, then add the sauerkraut, caraway seeds (if using), black pepper, and smoked paprika. Pour in the chicken broth or water, and stir to combine.
  • Simmer: Reduce the heat to low, cover the skillet, and simmer for 20-25 minutes, or until the potatoes are tender and the flavors have melded together. Stir occasionally to prevent sticking.
  • Serve: Garnish with fresh parsley if desired, and serve hot.
