Made with tender rotisserie chicken, flavorful stuffing, and a creamy sauce, this casserole comes together quickly and easily, giving you a hearty meal with minimal effort. Ingredients
  

  • 4 cups rotisserie chicken shredded
  • 1 box 6 oz stuffing mix (like Stove Top)
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup sour cream or Greek yogurt
  • 1/2 cup milk
  • 1 small onion chopped (optional)
  • 1-2 stalks celery diced (optional)
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese optional
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat the Oven:
  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • Prepare the Stuffing:
  • In a medium saucepan, bring the chicken broth and butter to a boil. Add the stuffing mix and stir to combine. Remove from heat, cover, and let it sit for 5 minutes until the stuffing absorbs the liquid. Fluff with a fork and set aside.
  • Sauté Vegetables (Optional):
  • If using onion and celery, sauté them in a skillet over medium heat with a bit of butter or oil for 5-7 minutes until softened.
  • Mix the Casserole Filling:
  • In a large mixing bowl, combine the shredded rotisserie chicken, cream of chicken soup, sour cream (or Greek yogurt), milk, and sautéed vegetables (if using). Season with salt and pepper to taste. If you want extra creaminess, you can stir in some shredded cheddar cheese.
  • Assemble the Casserole:
  • Spread the chicken mixture evenly into the prepared baking dish.
  • Top the chicken mixture with the prepared stuffing, spreading it out evenly across the top of the casserole.
  • Bake:
  • Bake in the preheated oven for 25-30 minutes until the casserole is heated through, and the stuffing is golden and crispy on top.
  • Garnish and Serve:
  • Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired, and serve with a side salad or roasted vegetables.

Notes

Add Veggies: For extra nutrition, you can add frozen mixed vegetables (peas, carrots, and corn) directly into the casserole mix.
