Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 packet ranch seasoning mix about 1 ounce
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1/2 teaspoon black pepper
  • 8 ounces cream cheese softened and cubed
  • 1/2 cup chicken broth
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley optional, for garnish

Instructions
 

  • Season the chicken: Sprinkle the ranch seasoning mix, onion powder, garlic powder, and black pepper evenly over the chicken.
  • Add the cream cheese: Distribute the cream cheese cubes on top of the seasoned chicken.
  • Add the broth: Pour the chicken broth into the slow cooker around the chicken, ensuring it doesn’t wash away the seasoning on top.
  • Cook the chicken: Cover the slow cooker with the lid and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and easily shredded.
  • Shred the chicken: Once cooked, use two forks to shred the chicken directly in the slow cooker. Stir the mixture to combine the shredded chicken with the melted cream cheese and seasoning.
  • Add cheese: Sprinkle the shredded cheddar cheese over the chicken mixture and stir to combine. Cover and cook for an additional 10-15 minutes until the cheese is melted and the mixture is creamy.
  • Garnish and serve: If desired, sprinkle with chopped fresh parsley before serving. Enjoy the crack chicken over rice, pasta, or with a side of your choice.
