Smoked Sausage and Potato Bake is the ultimate comfort food, combining savory smoked sausage, tender potatoes, and a medley of vibrant vegetables all baked together in a flavorful seasoning blend.

Equipment

  • Large mixing bowl
  • Knife and cutting board
  • Baking dish or sheet pan (9x13-inch recommended)
  • Aluminum foil
  • Measuring spoons

Ingredients
  

  • 1 lb smoked sausage sliced into rounds
  • lbs baby potatoes halved (or quartered if large)
  • 1 medium onion sliced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ cup shredded cheddar cheese optional
  • 2 tbsp chopped fresh parsley optional, for garnish

Instructions
 

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish or sheet pan with cooking spray or olive oil.
  • Prepare the Ingredients:
  • In a large mixing bowl, combine the sliced smoked sausage, baby potatoes, onion, red bell pepper, and green bell pepper.
  • Drizzle the mixture with olive oil and toss to coat evenly.
  • Season the Dish:
  • Sprinkle the vegetables and sausage with garlic powder, smoked paprika, dried thyme, black pepper, and salt. Toss again to distribute the seasoning evenly.
  • Assemble and Bake:
  • Spread the seasoned mixture evenly into the prepared baking dish or sheet pan.
  • Cover the dish with aluminum foil and bake for 30 minutes.
  • After 30 minutes, remove the foil, stir the ingredients, and bake uncovered for an additional 15–20 minutes, or until the potatoes are tender and slightly crispy on the edges.
  • Add Cheese (Optional): If desired, sprinkle the shredded cheddar cheese over the top of the dish during the last 5 minutes of baking to let it melt.
  • Serve and Garnish: Remove the dish from the oven and sprinkle with fresh parsley before serving for a burst of color and freshness.

Notes

Customize Veggies: Feel free to add other vegetables like zucchini, carrots, or mushrooms to suit your taste.
Use Pre-Cooked Sausage: Smoked sausage is pre-cooked, so it only needs to be heated through, making this dish super quick and easy.
