Smoked Sausage and Potato Bake

Smoked Sausage and Potato Bake is the ultimate comfort food, combining savory smoked sausage, tender potatoes, and a medley of vibrant vegetables all baked together in a flavorful seasoning blend.

Ingredients
  

  • 1 lb smoked sausage sliced into rounds
  • lbs baby potatoes halved (or quartered if large)
  • 1 medium onion sliced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ cup shredded cheddar cheese optional
  • 2 tbsp chopped fresh parsley optional, for garnish

Equipment

  • Large mixing bowl
  • Knife and cutting board
  • Baking dish or sheet pan (9x13-inch recommended)
  • Aluminum foil
  • Measuring spoons

Method
 

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish or sheet pan with cooking spray or olive oil.
  2. Prepare the Ingredients:
  3. In a large mixing bowl, combine the sliced smoked sausage, baby potatoes, onion, red bell pepper, and green bell pepper.
  4. Drizzle the mixture with olive oil and toss to coat evenly.
  5. Season the Dish:
  6. Sprinkle the vegetables and sausage with garlic powder, smoked paprika, dried thyme, black pepper, and salt. Toss again to distribute the seasoning evenly.
  7. Assemble and Bake:
  8. Spread the seasoned mixture evenly into the prepared baking dish or sheet pan.
  9. Cover the dish with aluminum foil and bake for 30 minutes.
  10. After 30 minutes, remove the foil, stir the ingredients, and bake uncovered for an additional 15–20 minutes, or until the potatoes are tender and slightly crispy on the edges.
  11. Add Cheese (Optional): If desired, sprinkle the shredded cheddar cheese over the top of the dish during the last 5 minutes of baking to let it melt.
  12. Serve and Garnish: Remove the dish from the oven and sprinkle with fresh parsley before serving for a burst of color and freshness.

Notes

Customize Veggies: Feel free to add other vegetables like zucchini, carrots, or mushrooms to suit your taste.
Use Pre-Cooked Sausage: Smoked sausage is pre-cooked, so it only needs to be heated through, making this dish super quick and easy.
