- Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish or sheet pan with cooking spray or olive oil.
- Prepare the Ingredients:
- In a large mixing bowl, combine the sliced smoked sausage, baby potatoes, onion, red bell pepper, and green bell pepper.
- Drizzle the mixture with olive oil and toss to coat evenly.
- Season the Dish:
- Sprinkle the vegetables and sausage with garlic powder, smoked paprika, dried thyme, black pepper, and salt. Toss again to distribute the seasoning evenly.
- Assemble and Bake:
- Spread the seasoned mixture evenly into the prepared baking dish or sheet pan.
- Cover the dish with aluminum foil and bake for 30 minutes.
- After 30 minutes, remove the foil, stir the ingredients, and bake uncovered for an additional 15–20 minutes, or until the potatoes are tender and slightly crispy on the edges.
- Add Cheese (Optional): If desired, sprinkle the shredded cheddar cheese over the top of the dish during the last 5 minutes of baking to let it melt.
- Serve and Garnish: Remove the dish from the oven and sprinkle with fresh parsley before serving for a burst of color and freshness.
