Ingredients
For the Cookie Dough:

Instructions
Preheat the Oven and Prepare Baking Sheets:
Preheat your oven to 375°F (190°C).
Line baking sheets with parchment paper.
Cream Butter and Sugar:
In a large mixing bowl, use an electric mixer to cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
Add Eggs and Vanilla:
Beat in the eggs one at a time, then add the vanilla extract, mixing until well incorporated.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, and salt.
Mix Dry Ingredients into Wet Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Add Sprinkles:
Fold in the 1/2 cup of rainbow sprinkles gently to distribute evenly throughout the dough.
Shape the Cookies:
Use a cookie scoop or spoon to form balls of dough. Roll each ball in additional rainbow sprinkles until well coated.
Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
Bake the Cookies:
Bake in the preheated oven for 8-10 minutes or until the edges are just turning golden.
Do not overbake to ensure the cookies remain soft.
Cool:
Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
