Swedish Nut Cake is a moist and nutty delight that’s filled and topped with a creamy cream cheese frosting and pecans. It’s not heavy or overly sweet either

Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 can 20 oz crushed pineapple with juice
  • 1 cup chopped pecans optional
  • For the Frosting:
  • 1 package 8 oz cream cheese, softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans optional

Method
 

  1. 2 cups all-purpose flour
  2. 2 cups granulated sugar
  3. 2 large eggs
  4. 1 teaspoon baking soda
  5. 1 teaspoon vanilla extract
  6. 1 can (20 oz) crushed pineapple with juice
  7. 1 cup chopped pecans (optional)
  8. For the Frosting:
  9. 1 package (8 oz) cream cheese, softened
  10. 1/2 cup unsalted butter, softened
  11. 2 cups powdered sugar
  12. 1 teaspoon vanilla extract
  13. 1/2 cup chopped pecans (optional)
  14. Directions
  15. Prepare the Cake:
  16. Preheat your oven to 350°F (175°C).
  17. In a large mixing bowl, combine the flour, sugar, eggs, baking soda, vanilla extract, and crushed pineapple with juice. Mix until well combined.
  18. Stir in the chopped pecans, if using.
  19. Pour the batter into a greased 9x13 inch baking dish.
  20. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  21. Allow the cake to cool completely in the baking dish.
  22. Prepare the Frosting:
  23. In a medium mixing bowl, beat the cream cheese and butter together until smooth and creamy.
  24. Gradually add the powdered sugar and vanilla extract, beating until well combined and smooth.
  25. Stir in the chopped pecans, if using.
  26. Frost the Cake:
  27. Spread the cream cheese frosting evenly over the cooled cake.
  28. Slice and serve.
