  • For the Cake
  • 1 cup mashed sweet potato about 1 large sweet potato
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup vegetable oil
  • ¾ cup milk
  • 2 teaspoons vanilla extract
  • For the Cinnamon Swirl
  • ½ cup unsalted butter melted
  • 1 cup brown sugar
  • 2 tablespoons cinnamon
  • For the Glaze
  • 4 ounces cream cheese softened
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Method
 

  1. Prepare the Sweet Potato
  2. Bake or microwave a sweet potato until soft. Mash it until smooth, then let it cool to room temperature.
  3. Make the Cake Batter
  4. Preheat your oven to 350°F and grease a 9x13-inch baking dish.
  5. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  6. In a separate bowl, mix the mashed sweet potato, eggs, oil, milk, and vanilla extract until well combined.
  7. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix. Pour the batter into the prepared baking dish.
  8. Add the Cinnamon Swirl
  9. In a small bowl, mix the melted butter, brown sugar, and cinnamon until smooth.
  10. Drop spoonfuls of the cinnamon mixture over the cake batter and use a knife to swirl it throughout the cake.
  11. Bake the Cake
  12. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool slightly before glazing.
  13. Make the Glaze
  14. Beat the cream cheese until smooth. Add the powdered sugar, milk, and vanilla extract, mixing until creamy. Adjust the consistency with more milk if needed.
  15. Glaze the Cake
  16. Drizzle the cream cheese glaze over the warm cake. Use an offset spatula to spread it evenly if desired.
  17. Serve
  18. Slice and serve warm or at room temperature
