Taco Pasta Salad

Taco Pasta Salad is a vibrant and zesty dish that combines the bold flavors of tacos with the creamy, satisfying texture of pasta salad.

Ingredients
  

  • 12 oz rotini or bowtie pasta
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1 cup shredded lettuce
  • ½ cup black olives sliced (optional)
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 tbsp lime juice
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste

Instructions
 

  • Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente according to package instructions. Drain and rinse with cold water to cool. Set aside.
  • Cook the Meat: In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat, add the taco seasoning, and cook according to the packet instructions. Let it cool.
  • Prepare the Dressing: In a mixing bowl, whisk together sour cream, mayonnaise, lime juice, garlic powder, onion powder, salt, and pepper. Adjust seasoning to taste.
  • Combine Ingredients: In a large bowl, mix the cooled pasta, seasoned meat, cheese, tomatoes, bell peppers, lettuce, and olives. Pour the dressing over the top and toss until well combined.
  • Chill and Serve: Refrigerate for at least 30 minutes before serving to let the flavors meld.
