Taco Pasta Salad

Taco Pasta Salad is a vibrant and zesty dish that combines the bold flavors of tacos with the creamy, satisfying texture of pasta salad.

Ingredients
  

  • 12 oz rotini or bowtie pasta
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1 cup shredded lettuce
  • ½ cup black olives sliced (optional)
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 tbsp lime juice
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste

Method
 

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente according to package instructions. Drain and rinse with cold water to cool. Set aside.
  2. Cook the Meat: In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat, add the taco seasoning, and cook according to the packet instructions. Let it cool.
  3. Prepare the Dressing: In a mixing bowl, whisk together sour cream, mayonnaise, lime juice, garlic powder, onion powder, salt, and pepper. Adjust seasoning to taste.
  4. Combine Ingredients: In a large bowl, mix the cooled pasta, seasoned meat, cheese, tomatoes, bell peppers, lettuce, and olives. Pour the dressing over the top and toss until well combined.
  5. Chill and Serve: Refrigerate for at least 30 minutes before serving to let the flavors meld.
