Tennessee Peach Pudding is a delightfully warm and comforting dessert that’s topped with a luscious sauce and juicy peaches.

Ingredients
  

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk

  • 1 teaspoon vanilla extract
  • 1 can 15 ounces sliced peaches, drained (or 2 cups fresh peaches, peeled and sliced)
  • For the Sauce:
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup boiling water
  • 1 tablespoon unsalted butter

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish.
  • Prepare the Pudding Batter:
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add the milk, melted butter, and vanilla extract. Stir until just combined.
  • Pour the batter into the prepared baking dish and spread it evenly.
  • Arrange the sliced peaches over the top of the batter.
  • Prepare the Sauce:
  • In a medium saucepan, combine the sugar and cornstarch.
  • Gradually add the boiling water, stirring constantly.
  • Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.
  • Remove from heat and stir in the butter.
  • Assemble and Bake:
  • Pour the sauce evenly over the batter and peaches in the baking dish.
  • Bake in the preheated oven for 45-50 minutes, or until the pudding is golden brown and set.
  • Serve:
  • Allow the pudding to cool slightly before serving.
  • Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
