Ingredients
  

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 can 15 ounces sliced peaches, drained (or 2 cups fresh peaches, peeled and sliced)

  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup boiling water
  • 1 tablespoon unsalted butter

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13-inch baking dish.
  3. Prepare the Pudding Batter:
  4. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  5. Add the milk, melted butter, and vanilla extract. Stir until just combined.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Arrange the sliced peaches over the top of the batter.

  9. In a medium saucepan, combine the sugar and cornstarch.
  10. Gradually add the boiling water, stirring constantly.

  12. Remove from heat and stir in the butter.
  13. Assemble and Bake:
  14. Pour the sauce evenly over the batter and peaches in the baking dish.
  15. Bake in the preheated oven for 45-50 minutes, or until the pudding is golden brown and set.
