Ingredients
  

  • 1 cup cottage cheese
  • 1 cup self-rising flour

Instructions
 

  • Mix the Dough:
  • In a mixing bowl, combine the cottage cheese and self-rising flour.
  • Stir with a spoon or spatula until the mixture forms a soft, sticky dough. If the dough is too sticky to handle, add a bit more flour, a tablespoon at a time, until it becomes easier to work with.
  • Shape the Flatbread:
  • Lightly flour a clean surface and turn the dough out onto it.
  • Divide the dough into 4 equal portions.
  • Using a rolling pin or your hands, gently flatten each portion into a round or oval shape, about 1/4-inch thick. You can make the flatbreads as thin or thick as you like, depending on your preference.
  • Cook the Flatbread:
  • Heat a non-stick skillet or griddle over medium heat.
  • Once the skillet is hot, place one of the flatbreads onto it.
  • Cook for 2-3 minutes on each side, or until golden brown spots appear and the bread is cooked through.
  • Repeat with the remaining flatbreads.
  • Serve:
  • Serve the cottage cheese flatbreads warm. They are delicious on their own or can be topped with a variety of ingredients like hummus, avocado, smoked salmon, or a drizzle of honey for a sweet option.

Notes

Self-Rising Flour Substitute: If you don’t have self-rising flour, you can make your own by mixing 1 cup of all-purpose flour with 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt.
