Tried and True Skinny Poolside Dip is a refreshing, light, and flavorful appetizer that’s perfect for summer gatherings or casual get-togethers by the pool.

Ingredients
  

  • 1 cup plain Greek yogurt
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced cucumber
  • 1/4 cup diced red onion
  • 1/4 cup diced jalapeño seeds removed for less heat
  • 1 tablespoon fresh lime juice
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: a pinch of cayenne pepper for extra spice

Equipment

  • Medium mixing bowl
  • Knife and cutting board
  • Measuring cups and spoons
  • Mixing spoon or spatula
  • Citrus juicer (optional)

Method
 

  1. Dice the red bell pepper, cucumber, red onion, and jalapeño. Make sure the pieces are small for a good mix of flavors in each bite.
  2. Mix the Dip:
  3. In a medium mixing bowl, combine the Greek yogurt, diced vegetables, lime juice, cilantro, garlic powder, and onion powder.
  4. Stir everything together until well mixed. Taste and season with salt, pepper, and cayenne (if using) to your preference.
  5. Chill and Serve:
  6. Cover the dip and refrigerate for at least 30 minutes to allow the flavors to meld together.
  7. Serve the dip chilled with your choice of chips, crackers, or fresh vegetables for dipping.
