Walking Taco Bake

This Walking Taco Bake combines all the flavors of your favorite walking tacos into a warm, cheesy, and comforting casserole. Perfect for busy weeknights or a fun family meal, this recipe is easy to prepare and customize with your favorite taco toppings. It’s a guaranteed crowd-pleaser!

Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • ¾ cup water
  • 1 15-ounce can black beans, rinsed and drained
  • 1 10-ounce can Rotel tomatoes with green chilies, undrained
  • 3 cups tortilla chips slightly crushed
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional Toppings:
  • Sour cream
  • Diced tomatoes
  • Shredded lettuce
  • Sliced black olives
  • Chopped green onions
  • Guacamole

Instructions
 

  • Preheat Oven:
  • Preheat your oven to 375°F (190°C).
  • Cook the Beef:
  • In a large skillet over medium heat, cook the ground beef until browned and crumbled. Drain any excess grease.
  • Add Seasoning and Veggies:
  • Stir in the taco seasoning mix and water, mixing well. Let it simmer for 2-3 minutes. Add the black beans and Rotel tomatoes, stirring until combined.
  • Assemble the Bake:
  • Spread a layer of slightly crushed tortilla chips in the bottom of a 9x13-inch baking dish. Top with the beef mixture, spreading it evenly. Sprinkle the cheddar cheese and Monterey Jack cheese over the beef.
  • Bake:
  • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  • Serve and Top:
  • Remove from the oven and let cool for 5 minutes. Serve with your favorite toppings like sour cream, diced tomatoes, and shredded lettuce for a complete walking taco experience.

Notes

Custom Chips: Swap tortilla chips for Fritos or Doritos for a fun flavor twist.
Add Veggies: Mix in sautéed onions or bell peppers for added texture and taste.
Make it Spicy: Add diced jalapeños or hot sauce to the beef mixture for a spicy kick.
