Zucchini patties

Zucchini patties are a fantastic way to turn humble zucchini into a crispy, flavorful dish that's perfect as a snack, side, or light vegetarian main course.

Ingredients
  

  • 2 medium zucchinis grated
  • 1/2 teaspoon salt
  • 1/2 cup breadcrumbs
  • 1/4 cup all-purpose flour
  • 1/3 cup grated Parmesan cheese or cheese of choice
  • 2 large eggs lightly beaten
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons chopped fresh parsley or dill
  • Salt and pepper to taste
  • Oil for frying vegetable or olive oil

Instructions
 

  • Prepare the Zucchini
  • Grate the zucchinis using a box grater. Sprinkle with 1/2 teaspoon of salt and let sit for 10 minutes.
  • Using a cheesecloth or clean kitchen towel, squeeze out as much moisture as possible. Removing excess water is key to achieving crispy patties.
  • Mix the Ingredients
  • In a large bowl, combine the grated zucchini, breadcrumbs, flour, Parmesan cheese, eggs, garlic powder, onion powder, parsley, salt, and pepper. Mix until well combined. The mixture should be sticky but hold together when shaped.
  • Form the Patties
  • Scoop about 2 tablespoons of the mixture and form it into small patties, about 2–3 inches in diameter.
  • Fry the Patties
  • Heat a thin layer of oil in a large skillet over medium heat. Once hot, add the patties, making sure not to overcrowd the pan.
  • Cook for 3–4 minutes per side or until golden brown and crispy.
  • Drain and Serve
