Ingredients:

For the Crust:

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • ½ teaspoon salt
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 4-5 tablespoons ice water

For the Apple Filling:

  • 6 medium apples (Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice

For the Crumble Topping:

  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ½ cup unsalted butter, cold and cubed
  • ½ teaspoon ground cinnamon

Directions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, leaving a little overhang for easy removal.
  2. Prepare the crust: In a large mixing bowl, whisk together the flour, sugar, and salt. Add in the cold, cubed butter, and use a pastry cutter or fork to cut the butter into the flour mixture until it resembles coarse crumbs. Add the egg yolk and ice water, one tablespoon at a time, mixing until the dough comes together. Press the dough evenly into the bottom of the prepared baking dish and set aside.
  3. Make the apple filling: In a medium bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat the apples evenly, then spread the apple mixture over the prepared crust.
  4. Prepare the crumble topping: In a separate bowl, mix the flour, oats, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle the crumble evenly over the apples.
  5. Bake: Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the apples are tender. Allow the bars to cool completely in the baking dish before lifting them out using the parchment paper overhang. Slice into bars.
  6. Serve and enjoy: These bars can be served warm or at room temperature, on their own or with a scoop of vanilla ice cream for an extra indulgent treat!
