Directions
- Prepare the Dough:
- In a large mixing bowl, combine the flour and salt.
- Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until the dough comes together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Make the Filling:
- In a mixing bowl, combine the diced apples or peaches, granulated sugar, cinnamon, nutmeg (if using), lemon juice, and cornstarch. Mix well and set aside.
- Assemble the Pies:
- On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick.
- Cut out circles using a biscuit cutter or a glass (about 4-5 inches in diameter).
- Place a spoonful of the fruit filling in the center of each circle.
- Fold the dough over to form a half-moon shape and press the edges together with a fork to seal.
- Fry the Pies:
- In a large skillet or deep fryer, heat the vegetable oil to 350°F (175°C).
- Fry the pies in batches until golden brown, about 2-3 minutes per side.
- Remove with a slotted spoon and drain on paper towels.
- Serve:
- Dust with powdered sugar if desired and serve warm.
