Ingredients

    • 2 cups powdered sugar

    • 1/2 cup chopped pecans (optional)

Directions

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C).
    • In a large mixing bowl, combine the flour, sugar, eggs, baking soda, vanilla extract, and crushed pineapple with juice. Mix until well combined.
    • Stir in the chopped pecans, if using.
    • Pour the batter into a greased 9×13 inch baking dish.
    • Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool completely in the baking dish.
  2. Prepare the Frosting:
    • In a medium mixing bowl, beat the cream cheese and butter together until smooth and creamy.
    • Gradually add the powdered sugar and vanilla extract, beating until well combined and smooth.
    • Stir in the chopped pecans, if using.
  3. Frost the Cake:
    • Spread the cream cheese frosting evenly over the cooled cake.
    • Slice and serve.
