Baked Apple Fritters

Baked Apple Fritters are a lighter take on the classic fried version, yet they’re still bursting with warm cinnamon and fresh apple goodness.

Equipment

  • Parchment paper or silicone baking mat
  • Mixing bowls (large and medium)
  • Whisk

Ingredients
  

  • For the Fritters:
  • 1 ¾ cups all-purpose flour 220 g
  • ¼ cup granulated sugar 50 g
  • 2 tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg optional
  • ½ tsp salt
  • 2 large eggs
  • ¼ cup whole milk 60 ml
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract
  • 1 ½ cups diced apples about 2 medium apples
  • 1 tbsp lemon juice
  • For the Glaze:
  • 1 cup powdered sugar 120 g
  • 2 –3 tbsp milk
  • ½ tsp vanilla extract

Instructions
 

  • Prepare the Baking Sheet and Preheat Oven:
  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper or a silicone baking mat.
  • Prepare the Apples:
  • Toss the diced apples with the lemon juice to prevent browning and set aside.
  • Mix the Dry Ingredients:
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg (if using), and salt.
  • Combine the Wet Ingredients:
  • In a medium bowl, whisk together the eggs, milk, melted butter, and vanilla extract until smooth.
  • Combine the Batter:
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  • Fold in the diced apples gently with a spatula.
  • Shape the Fritters:
  • Use a spoon to drop heaping spoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten slightly with the back of the spoon for even baking.
  • Bake the Fritters:
  • Bake in the preheated oven for 15–18 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
  • Prepare the Glaze:
  • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if needed.
  • Glaze the Fritters:
  • While the fritters are still warm, drizzle the glaze over the top using a spoon or a pastry brush. Let the glaze set before serving.

Notes

Apple Variety: Use firm, tart apples like Granny Smith or sweet varieties like Honeycrisp for the best flavor.
Make-Ahead Option: The fritters can be baked and stored without glaze in an airtight container for up to 2 days. Glaze before serving for a fresh taste.
